Vegetable Tortilla Soup

  • 1/2 c. diced red bell pepper
  • 1/2 c. diced white onion
  • 1/4 c. diced celery
  • 1/4 c. diced carrot
  • 2 Tbsp. chopped garlic
  • 7 oz. can diced chilies
  • 2/3 c. corn kernels
  • 7 oz. diced tomato
  • 2 corn tortillas ripped in pieces
  • 1 Tbsp. cumin
  • S + P to taste
  • 1 quart vegetable stock
  • 1 c. diced zucchini
  • Juice of 1 lime
  • 2 Tbsp. Chopped cilantro
  • Avocado
  • Shredded pepper jack cheese

Sweat aromatics in olive oil. Add all other ingredients except zucchini, lime and cilantro. Simmer 45 minutes; if too thin, add more tortillas. Add zucchini and simmer for 10 minutes. Finish with lime and cilantro, and garnish with sliced avocado and pepper jack cheese.
