Vegetarian Chili

 Thai Red Curry Kabocha Squash Soup

  • 3 cups of your choice of beans (precooked)
  • 8 Roma tomatoes
  • 4-6 mini sweet peppers or one large yellow or orange bell pepper
  • 1 small to medium white onion
  • 2 tsp. chili powder
  • 1 tsp. garlic powder
  • 2-3 cups water
  • 1/2 tsp. salt
  • Pepper to taste

Place four Roma tomatoes in blender and blend until mostly pureed. Dice remaining tomatoes, bell peppers and onion. In a saucepan, add 2 cups water, beans, tomato puree, vegetables and spices. Simmer on medium heat until vegetables are soft. Add additional cup of water if desired or needed during cooking.

Serve with dollop of sour cream, shredded sharp cheddar and cilantro.
