Turkey and quinoa meatloaf

Try changing up your standard meatloaf with this recipe for a healthy and tasty alternative. Using ground turkey makes it leaner and more heart healthy than ground beef and the quinoa provides an added protein boost.

  • 1 roasted and diced red bell pepper
  • ½ white onion diced
  • 6 sundried tomatoes diced
  • ¼ cup artichoke hearts, not marinated, chopped
  • 1 T. chopped garlic
  • 1t. fresh, chopped thyme
  • 1 T. virgin olive oil
  • 1 T. balsamic vinegar
  • 1 pound lean ground turkey
  • 2 c. cooked quinoa
  • 1 egg
  • Salt and pepper to taste
  • Dash of cayenne pepper

Sautee garlic and onion in olive oil until tender. Mix all ingredients together. Place in an oiled 9-inch loaf pan. Bake at 350 degrees for 45 minutes. Let cool for 10 minutes before serving.
