Tofu Pate

 Thai Red Curry Kabocha Squash Soup

  • 1 block firm tofu diced
  • 1 carrot diced
  • 1 stalk celery diced
  • 1 green onion sliced thin
  • ¼ cup cilantro leaves
  • Juice of ½ fresh lime
  • 2 teaspoons sesame oil
  • ¼ cup almond butter
  • 1 teaspoon sea salt
  • Fresh ground pepper to taste
  • ½ jalapeno seeds removed
  • Optional 2-3 teaspoons Sriracha sauce

Place all ingredients in a food processor and pulse until fairly smooth. Serve chilled, spread on bagels, toasted hearty whole grain bread or as a dip for fresh vegetables.
