Pork Green Chili Stew

Grover Soup

  • 3 tablespoons olive oil
  • 2 lbs. pork shoulder cut in 1-inch cubes
  • Salt and pepper
  • 1 large white onion sliced thin
  • 1 poblano chili, roasted, peeled and diced, or you may use 1 14 oz can of diced chilis
  • 1 Serrano seeded and chopped
  • 1 teaspoon smoked paprika
  • 5 garlic cloves chopped
  • 2 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 cups chicken broth
  • 2 tablespoons lime juice
  • 1 chayote squash diced small
  • 3 tablespoons chopped cilantro
  • Corn tortillas

Season pork with salt and pepper, and sear in olive oil over medium heat. Add garlic and onion and cook for 5 minutes, then add chilies, spices and chicken broth. Simmer covered for about an hour and a half, until pork is tender. Stir in lime juice, cilantro and squash, and simmer for 5 minutes more. Serve with warm corn tortillas.
