Hawaiian Style Ciabatta Pizzas

 Caprese Salad

Ingredients

  • 4 ciabatta rolls, cut in half
  • 1 pkg. Canadian style bacon
  • 1 cup fresh pineapple chunks
  • 1 cup part-skim mozzarella, shredded
  • 1 cup fat-free plain Greek yogurt
  • 1 cup fat-free sour cream
  • ½ teaspoon parsley
  • ½ teaspoon dill
  • ½ teaspoon chives
  • ¼ teaspoon salt

Directions

  1. Preheat oven to 400 degrees.
  2. In a small bowl, create ranch dressing by whisking together the yogurt, sour cream and all seasonings. Cover and refrigerate for 15 minutes.
  3. Place cut ciabatta rolls face up on cookie sheet.
  4. Spread ranch dressing over the top of each roll, then layer the cheese, Canadian bacon and pineapple chunks on each.
  5. Bake for 15 minutes or until cheese is bubbly.
  6. Refrigerate remaining ranch dressing.
