Grover Soup is a favorite recipe in the St. Charles Bend Corner Deli. This vegetarian chili recipe from St. Charles Executive Chef David Tankersley is rich in flavor and makes a perfect light lunch or dinner. Enjoy!
- ½ medium onion diced
- 1 Tb. chopped garlic
- 1 medium red bell pepper diced
- 1 can drained kidney beans
- 1 can diced tomato with juice
- 2 c. vegetable broth
- 1 dried Ancho chili, toasted in the oven for 5 minutes, stemmed, seeded and chopped
- ¼ tsp. dried oregano
- ½ tsp. ground cumin
- 1 tsp. honey
- Salt and pepper to taste
- 2 tsp. chopped cilantro
- Sour cream for garnish
Simmer all ingredients except cilantro, honey and sour cream for 30 to 40 minutes. Add honey and cilantro, garnish with sour cream.
