Bulgur Wheat Salad

This high-fiber salad has a fresh taste and is a good source of protein.

  • 1 cup bulgur wheat
  • 2 cups water
Combine bulgur and water, bring to boil then turn down to low and simmer until all liquid is absorbed, approximately 20 minutes.
Remove from stove, fluff with fork and set aside.
Other ingredients:
  • ½ cup crumbled feta cheese
  • 4 roma tomatoes, diced
  • 1 small bunch green onions, thinly sliced
  • Zest and juice of 1 lemon
  • 2 Tbsp Extra Virgin Olive Oil
In large mixing bowl, toss the bulgur with all of above ingredients. Chill and serve.
